Pineapple-Nut Spice Cake
From "Cotton Country Cooking" by the Junior League of Morgan County, Alabama
Ingredients
- 2 1/2 C sifted self-rising flour
- 2 C sugar
- 1 1/2 C Crisco oil
- 4 egg yolks
- 1 8.5 oz can crushe dpineapple and juice
- 1 1/2 tsp nutmeg
- 2 Tbl hot water
- 2 tsp cinnamon
- 1 tsp butter extract
- 1 tsp coconut extract
- 1 tsp vanilla
- 1 C chopped nuts
- 4 egg whites beaten
Directions:
- Combine all ingredients except nuts and egg whites.
- Beat well and then add nuts
- Fold in egg whites.
- Pour into greased and floured tube pan.
- Place in cold oven
- Set for 325 degrees and bake one hour and 15 minutes
- Let cook 15 minutes before removing from pan.
