Pineapple-Nut Spice Cake

From "Cotton Country Cooking" by the Junior League of Morgan County, Alabama

Ingredients

  • 2 1/2 C sifted self-rising flour
  • 2 C sugar
  • 1 1/2 C Crisco oil
  • 4 egg yolks
  • 1 8.5 oz can crushe dpineapple and juice
  • 1 1/2 tsp nutmeg
  • 2 Tbl hot water
  • 2 tsp cinnamon
  • 1 tsp butter extract
  • 1 tsp coconut extract
  • 1 tsp vanilla
  • 1 C chopped nuts
  • 4 egg whites beaten

Directions:

  1. Combine all ingredients except nuts and egg whites.
  2. Beat well and then add nuts
  3. Fold in egg whites.
  4. Pour into greased and floured tube pan.
  5. Place in cold oven
  6. Set for 325 degrees and bake one hour and 15 minutes
  7. Let cook 15 minutes before removing from pan.
