Beverly Ann's Shrimp in Wine Sauce

From "Cotton Country Cooking" by the Junior League of Morgan County, Alabama

Ingredients

  • 6 Tbl butter
  • 6 Tbl flour
  • 1 1/2 C milk
  • 1 C shrimp stock
  • 1/4 C dry sherry
  • 1 tsp nutmeg
  • Paprika to color

Serves 6 to 8

Directions:

  1. Melt butter in saucepan
  2. Blend in flour, stir until smooth
  3. Stir in next three ingredients gradually and cook over direct heat, stirring constantly until  sauce becomes thick and smooth.
  4. Add nutmeg
  5. Stir in cooked shrimp and paprika for color.
  6. Serve over rice.
